Brewing Method (Drip, Chemex, AeroPress, etc.): Chemex Time Between Purchase and Brewing (Ballpark is fine): Four Days Aroma: Upon opening the tin, we noted warm milk chocolate, chocolate truffle with mixed berry compote, raspberry jam, light florals, and a hint of graham. The grind offered baking spices, oak bark, medium-grade dark chocolate, a touch of mixed red berry compote, and fruity pebbles. On the pour, dark chocolate, ripe raspberry and blackberry, and pure cane sugar showed.

Flavor Profile: The first sip arrived with a low- to mid-palate entry that floats just above the tongue to the back and then swirls around to the middle. Medium- to full-bodied, it occupies the entirety of the palate. Vibrant notes of cocoa powder, toffee, wild honey, jasmine, florals, Guji apple, and soft blood orange first show. The second sip offers a broader, juicier profile, showcasing muddled cranberry, marmalade, and red apple, with slightly more weight. The tip of the tongue dances with florals, jasmine, and white tea, while the sides of the tongue capture thick lime and black tea. The finish is clean and dry, with aromatics of black tea lingering.

Overall Impression (What did you think of it? Anything else we should know?): This was a well-balanced, flavor-rich coffee that we would describe as refined elegance. With multiple layers, along with a complex profile structure, including multiple discernible tea notes, we found this coffee to be superb and worthy of the splurge for the home barista seeking to take a try and a gesha. True to form, in addition to a straight black coffee, we tried this with milk, and the flavors held up nicely. We paired the coffee with sourdough and salted butter, and the profile held fairly consistent. We would be remiss if we failed to note the killer design work on these tins, done by the same artist who created the artwork for certain New Belgium beers, Josh Holland. We have seen some great art in our 100+ reviews, but this takes the cake. We also appreciated the tin delivery system, as it added an air of excitement to the coffee when we received it.
