Review #7: Cut Coffee

Origin of Beans: Copan Ruinas, Honduras

Price: $19 CAD ($15.16 USD) (12 oz)

Brewing Method (Drip, Chemex, AeroPress, etc.): Chemex

Time Between Purchase and Brewing (Ballpark is fine): Ten Days

Aroma: Opening the bag, we noted a deep chocolate mocha, reminiscent of brownie batter, with a hint of smoke on the back end. Grinding the beans revealed a more lush mocha with a bit of baking spice. The pour revealed warm ganache.

Flavor Profile: The flavor was complex, with a full, balanced mouth feel. The first sip was bright, with light acid on the top of the tongue that rolled back in a slow wave. The initial flavor was berry, evolving into notes of a spiced chocolate, then berry and citrus returning to linger on the finish. After the cup had cooled, the chocolate flavor became more dominant. The final aromatics were chocolate cake and orange.

Overall Impression (What did you think of it? Anything else we should know?): This was a thoroughly enjoyable, well-balanced cup, dynamic and evolving over time. The aromatics lingering on the finish were most pleasing, with a softness lacking any bitterness. While we drank it black for our review, we tried a second cup with milk, and the coffee was still a very pleasant flavor. We would recommend this coffee to anyone who can get their hands on it. Special thanks go to a barista at the PATH location of Sam James Coffee Bar in Toronto who recommended these beans to us. We owe you one.
