Review #11: Onyx Coffee Lab

Origin of Beans: Chalatenango, El Salvador Price: $20.50 (price includes shipping) (12 oz) Brewing Method (Drip, Chemex, AeroPress, etc.): Chemex Time Between Purchase and Brewing (Ballpark is fine): Six Days Aroma: Opening the bag, we noted graham cracker, a slight tart fruit, and warm chocolate cake. The grind revealed more apple on the nose and a syrupy brightness paired with spiced chocolate. On the pour, we caught the scents of burnt honey sweetness, rich chocolate cake, and a mild syrup. Flavor Profile: High roof of mouth entry that falls and coats tongue front to back right down the middle. The flavor hangs in the center of the mouth between the tongue and roof. Ripe apple dominates, with more subtle, dark fruit following. The coffee has a syrupy, luxe consistency, but not in a heavy way - more like a warmed honey. Mandarin orange marmalade aromatics were initially noted on the finish. Light acidity follows, with floral aromatics. Overall Impression (What did you think of it? Anything else we should know?): This coffee provided a very enjoyable, balanced cup with pleasurable fruit notes (think apple, not berry) that we would highly recommend, especially during autumn.
