Review #15: MORU Specialty Coffee Roasters

Brewing Method (Drip, Chemex, AeroPress, etc.): Chemex Time Between Purchase and Brewing (Ballpark is fine): Four Days Aroma: Opening the bag, we noted a medium roast smell with a slight hint of bright fruit sweetness. Settling, the coffee showed Mexican cocoa, while soft chocolate lingered. After grinding the beans, a deep cocoa pervaded. On the pour, we noted smoke along with a deep sweetness, reminiscent of dark brown sugar and raw honey.

Flavor Profile: This coffee exhibited a full, heavy, rich entry, which moored itself in the front half of the mouth. Acidity slowly drew back on the top of the tongue beneath the enveloping blanket of flavor. Smoky notes of the roast along with cocoa appeared first, while a light, thin, berry juice note developed later on the tip of the tongue and around the sides of the tongue. The finishing aromatics were a pleasant, mild chocolate that we thoroughly enjoyed. On the side of the tongue, one finds a brightness not found upon initial entry that presents acidity and notes of concord grape.

Overall Impression (What did you think of it? Anything else we should know?): Ultimately, we found this coffee to be largely one note, but a powerful, full-bodied one that lends itself to pairing with a berry-laden breakfast item, granola, or mixing on its own with milk. Put another way, this coffee is ideal as a complement. One interesting tidbit we'd like to note is that this coffee had an intriguing, slowly rising bloom that was relatively novel to us. Also, MORU's coffee arrives in a traditional foil-lined bag, which itself is wrapped in a tied plastic bag to ensure freshness.
