Origin of Beans: Huila, Colombia Price: $12 (8 oz.) Brewing Method (Drip, Chemex, AeroPress, etc.): Chemex Time Between Purchase and Brewing (Ballpark is fine): 2 days Aroma: Cutting open the bag, we were met with rich chocolate ganache, brownie batter, baking spices, semi-sweet chocolate chips, and a hint of peanut butter. The grind revealed brighter scents, with initial notes of graham cracker and sea salt followed by baking spices, cocoa, and a touch of deep red berry compote. On the pour, light brown sugar and caramelizing white cane sugar dominated.

Flavor Profile: The coffee had a mid-palate entry and exhibited a medium-to-full body. On the initial sip, the coffee's flavors were vibrant, and the coffee coated the tongue evenly before resting on the front end. Notes of cinnamon, brown sugar, and bittersweet chocolate are first noticed. The sides of the tongue pick up acidity reminiscent of orange peel. Green apple shows on the back and sides of the tongue, with a balanced aftertaste and aromatics of chocolate pervading. As the coffee cools, more fruit shows - alongside the apple and orange peal appear guava, lime, dry, steel-fermented white wine, and a hint of blackberry. Overall Impression (What did you think of it? Anything else we should know?): This is a balanced, smooth cup that is versatile enough for all palates to enjoy. The initial notes of chocolate that opened into a diverse collection of tart fruit are a great means to coax non-specialty coffee drinkers into giving specialty coffee a try. This is a dynamic cup that can be taken on its own - in fact, we'd recommend it to ensure that you experience the full panoply of flavors - and we feel this one is best enjoyed in the summertime.
