Review #63: Killer Roasting Co.

Name of Roast: Costa Rica Sonora Type of Roast (Light, Medium, Dark): Light/Medium Origin of Beans: Central Valley, Costa Rica Price: $14 (8 oz.) Brewing Method (Drip, Chemex, AeroPress, etc.): Chemex Time Between Purchase and Brewing (Ballpark is fine): Five Days Aroma: Opening the bag, we noted rich, deep chocolate cake, toasted pecan, bright sugar cookie, slight baking spice, a touch of lime rind, and soft dark berry underneath. The grind brought bright mixed berry (blueberry, raspberry, and blackberry), followed by rich chocolate ganache, with baking spice on the end. On the pour, we found lush white can sugar, followed by dark brown sugar with a touch of toffee, then dark chocolate.

Flavor Profile: The coffee was full-bodied, with a mid-palate entry that was viscous, rich, and lush. Aromatics of blueberry rose high on the sip while the liquid slowly flowed across the tongue from front to back, coating the tongue in rich chocolate, blueberry, and lingonberry. The sides of the tongue pick up rounded notes of green apple and lime that fade and meld with the sip before a dry finish. As it cools, ganache becomes more pronounced along with a burnt orange rind, with cinnamon and sugar showing after.

Overall Impression (What did you think of it? Anything else we should know?): This coffee was soft and consistent, with a flavor profile that held firm without many twists and turns. The dry finish was surprising, drawing us back for further sips to keep the flavors flush in our palate and making for a quickly finished cup of coffee. This coffee's profile did not hold up as well when mixed with milk, so if that's your style, we wanted to ensure you are aware. We think this is a great expression of a Costa Rican coffee, showing slightly more fruit and slightly less chocolate than the norm.
