Brewing Method (Drip, Chemex, AeroPress, etc.): Chemex Time Between Purchase and Brewing (Ballpark is fine): Twelve Days Aroma: Opening the bag, one finds deep, rich chocolate brownie batter mixed with baking spiced, followed by warm chocolate chip cookies, and a latent hint of orange cream and Corn Pops cereal. After grinding the beans, bright blackberry and raspberry emerge, reminiscent of a jam-filled truffle, followed by a toasted grain. On the pour, dark brown sugar, agave nectar, and a touch of sharp dark chocolate are noted.

Flavor Profile: The coffee has a mid-to-high entry on the palate with medium body. The first note on the sip is a bittersweet dark chocolate that hangs in the front of the mouth from tongue to roof. If slowly glides back, viscous and rich, coating the tongue. Secondary is a brightness of berry (raspberry, sour cherry, possibly blackberry) mixed with green apple that develops on the periphery, surrounding the chocolate note and creating a harmonious balance on the finish. On the tip of the tongue, sharp lime shows, while the sides of the tongue pick up a more subdued lime flavor. After the sip, aromatics rise that fill the olfactory system with a lush dark chocolate flaked with raspberry, and a slightly acidic aftertaste remains. As the coffee cools, the chocolate fades, with apple and berry taking precedence.

Overall Impression (What did you think of it? Anything else we should know?): This was a surprising coffee, providing bright, ebullient flavors at the initial sip that jolted us awake at a quicker clip than the traditional chocolate-forward cup that signals an easing into our day. We recommend it as a good morning cup for those that like lively juice flavors as a part of their daily cup. For bloom fans, this one offered a medium-sized bloom, taking a little over forty seconds to finish the bloom process.
