Review #65: City of Saints Coffee Roasters

Name of Roast: Dos Socios Type of Roast (Light, Medium, Dark): Medium Origin of Beans: Finca los Dos Socios, Huehuetenango, Guatemala Price: $16 (12 oz.) Brewing Method (Drip, Chemex, AeroPress, etc.): Chemex Time Between Purchase and Brewing (Ballpark is fine): Fifteen Days Aroma: Tearing open the bag, the initial scent is that of crisp chocolate brownie edges, followed by cocoa powder, a cooling spearmint, and a slight grain found underneath. After the grind, baking spice prevailed, with a soft undercurrent of strawberry showing thereafter. The pour showed white cane sugar mixed with light brown sugar, then molasses once it settled in our mug.

Flavor Profile: The coffee hits mid-palate, with a mid-to-full-bodied entry that takes up residence on the front half of the tongue, simultaneously reaching high to the roof and hugging the floor of the tongue. Rich and viscous, the initial flavor is a surprisingly nimble note of spiced dark chocolate, followed by toasted pecan and walnut, and then a slight caramel or butterscotch. The sides of the tongue provide the acid, which is a sharp apple that fades quickly. As the coffee cools, apple and pear show on the front end of the tongue, filling out the flavor profile. Aromatics of crisp chocolate brownie crust persist.

Overall Impression (What did you think of it? Anything else we should know?): This is a fine coffee the represents Huehuetnenago rather well. The flavors are not quite as robust for a Guatemalan as some we have found previously, but that by no means is to be taken as this being a lackluster cup - it is quite clearly elevated from your day-to-day roast. If you are in or around NYC, we'd recommend giving these guys a try. Moving aside from the coffee itself, we would be remiss if we failed to compliment City of Saints on their stellar customer service and responsiveness. Our bag of Dos Santos initially was lost in transit, and City of Saints efficiently rectified the issue when we reached out. We sincerely appreciate all businesses that put the customer first, and City of Saints deserves recognition for their helpfulness with our order.
