Review #68: Innkeeper's Coffee

Name of Roast: Colombian Supremo Type of Roast (Light, Medium, Dark): Medium Origin of Beans: Colombia Price: $14 (16 oz.) Brewing Method (Drip, Chemex, AeroPress, etc.): Chemex Time Between Purchase and Brewing (Ballpark is fine): Sixteen Days Aroma: Tearing open the bag, we noted rich chocolate brownie crisped edges, dark chocolate, and cocoa powder. On the grind, we found brightened cocoa powder, sharp dark chocolate flakes, strawberry jam, blackberry jam, and baking spice. The pour revealed raw cane sugar, dark brown sugar, and caramelizing sugar.

Flavor Profile: The first sip offered a high-to-mid entry, with light-to-medium body to start. Austere, sharp dark chocolate is found immediately on the front end. Herbaceous notes on follow, with rich, viscous chocolate syrup coating the tongue after. Sides of the tongue capture lemon, while front of tongue captures cedar, baked apple, heirloom tomato, and blackberry juice as the coffee cools. Lush, surprising aromatics of florals are noted on the finish that are followed by black peppercorn and high-percentage dark chocolate. Smooth, balanced, slightly dry finish, with the peppercorn becoming more accentuated as the coffee settles.

Overall Impression (What did you think of it? Anything else we should know?): This was a pleasant cup that likely will show different notes once paired. Given the spare description on the bag (heavy-bodied, pleasant acidity), we were surprised by the wide variety of flavors we found on the sip, but the finish pointed to beans that were in the roaster just a touch too long. If you like a coffee that approaches a dark roast, but doesn't quite get there, this is the coffee for you. The price point for this coffee is pretty much on par with a big box store, and Innkeeper's has a lovely space that we recommend visiting if you find yourself in the Galesburg area.
