Review #71: Elixr Coffee Roasters

Origin of Beans: Cobán, Santa Rosa, Guatemala Price: $17 (12 oz) Brewing Method (Drip, Chemex, AeroPress, etc.): Chemex Time Between Purchase and Brewing (Ballpark is fine): Four Days Aroma: Opening the bag, we were greeted by rich graham cracker and chocolate, reminiscent of s’mores; chewy, frosted chocolate cake follows. On the grind, blackberry and apple show through, while baking spices make an appearance; graham cracker and chocolate remain underneath. On the pour, raspberry, orange, toffee, and caramelizing sugar appear. Flavor Profile: The first sip offered a full-bodied entry, with medium weight and a surprising acidity that floats to the roof of the mouth. Underneath, a rich melange of soft mango, baked red apple, pear, lime, caramel, blackberry, cranberry, blueberry, and warmed chocolate undulate. Sides of the tongue pick up additional lime and citrus, while the tip of the tongue shows tart berry, reminiscent of raspberry lemonade. Finishing aromatics are clean and balanced, with a Mexican spiced chocolate and a touch of smoke lingering after the sip. Overall Impression (What did you think of it? Anything else we should know?): This is a vibrant cup with a disarming touch of acidity. We recommend it with savory items, and we also would recommend this as an "all day" coffee, as it finds the sweet spot between delicate and powerful that makes for a good afternoon cup. Perusing Elixr's site, we noticed that they offer an "omakase" tasting, which is a six-course coffee tasting in which the barista chooses the styles, brew methods, and coffees served at the tasting. We think this is a fun idea and recommend that any coffee enthusiasts traveling to Philadelphia give it a shot.
