Brewing Method (Drip, Chemex, AeroPress, etc.): Chemex Time Between Purchase and Brewing (Ballpark is fine): Ten Days Aroma: Cutting open the bag, we noted crisp chocolate brownie, strawberry jam, concord grape, chocolate ganache, and cocoa. On the grind, baking spice, red berry, and Mexican cocoa showed. On the pour, we noted rich brown sugar, pure cane sugar, and a touch of toffee.
Flavor Profile: The sip offered a full body, rich and viscous, yet nimble. Balanced and smooth mid-palate, the primary notes are honey and sharp dark chocolate, with florals rising as a secondary note before the finish, which is warm and toasty, with hints of cinnamon and marshmallow. The sides of the tongue pick up orange and lime, and the tip of tongue catches orange and ripe tomato. The finishing aromatics are long and slightly weighted, adding heft to the cup.
Overall Impression (What did you think of it? Anything else we should know?): We found this offering to be a cup with weight that can stand on its own. We paired it separately with a chocolate truffle and with raw, unsalted peanuts, and the flavors responded best to the latter. Therefore, we recommend trying this with peanut butter toast to start your morning. We'd also like to comment on the packaging, which is extremely creative, and the website for Thou Mayest, which is a touch more irreverent than the usual site.
