Brewing Method (Drip, Chemex, AeroPress, etc.): Chemex Time Between Purchase and Brewing (Ballpark is fine): Thirty-Three Days Aroma: Cutting open the bag, we noted molten lava cake, cinnamon, thick ganache, hazelnut, and hot cocoa. The grind showed Cocoa Krispies, slight strawberry jam, and less ganache. On the pour, we noted soft caramelizing sugar, wet stone, cocoa, and a touch of dark brown sugar.

Flavor Profile: The sip is full-bodied, with a mid-to-high palate entry that hangs on the front half of the tongue, enveloping the roof of the mouth in rich, balanced dark chocolate that flows to the back of the tongue. The base of the tongue catches lighter chocolate, while the sides of the tongue get a rounded lime and the tip of the tongue registers sharp orange juice. The body is full of chocolate and a jam of dark mixed berry, calling to mind blackberry and currant. The finish has notes of a cinnamon bun with blackberry jam; a slightly dry finish mellows as the coffee cools into a longer wave of flavor.

Overall Impression (What did you think of it? Anything else we should know?): This coffee is eminently quaffable and rich. It pairs extremely well with a breakfast of peanut butter and toast, elevating the coffee as an accompaniment. We enjoyed this both black and with milk, and we found it to be an all-day sipper. Approachable yet evocative, we recommend this one very highly.
