Origin of Beans: Cerro Azul, Valle del Cauca, Colombia Price: $25 (150g / 5.3 oz.) Brewing Method (Drip, Chemex, AeroPress, etc.): Chemex Time Between Purchase and Brewing (Ballpark is fine): Three Days Aroma: Opening the tin, we were greeted with rich, deep dark chocolate, cocoa nibs, a touch of nougat, cocoa powder, and Oreo wafer. After the grind, the coffee brightened greatly, with pillowy scents of fresh baked brownie, brown sugar, baking spices, and soft ganache appearing. On the pour, the scents were tea-like and floral in nature, with wet stone, soft dark brown sugar, and a slight caramel also showing.

Flavor Profile: Wild, bright, floral, and pleasantly acidic, the coffee showed notes of lemongrass and jasmine on a soft, ethereal entry to the palate. The profile hangs in the front half of mouth, full-flavored and clinging to the roof. The coffee took up residence mid-palate and on the front of the tongue, while the tip of the tongue dances with a medley of flavors. Orange juice, passion fruit, guava, papaya, jasmine tea, and hint of pineapple were noted. The sides of the tongue pick up lime, passion fruit, and guava. The finish is clean and bright, with notes of Hawaiian Punch on the back end. As the coffee cooled, dark chocolate came forward, along with cocoa nibs.

Overall Impression (What did you think of it? Anything else we should know?): Modcup was kind enough to send a sample of this coffee to us to try, and we cannot thank them enough for the opportunity to try this stunner of a roast. This coffee was one of the most interesting we have tried since starting this site, and the score reflects the quality of this cup. We cannot recommend it more highly, and if you're looking to splurge, you will not be disappointed in this coffee. For those who are concerned about mixing and pairing, the coffee mixed well with milk, but it definitely shined when taken black. We paired it with pecan pancakes, and the coffee held its own against the strong sweet flavors of the breakfast item. That stated, you should enjoy this one solo and savor it.
