Brewing Method (Drip, Chemex, AeroPress, etc.): Chemex Time Between Purchase and Brewing (Ballpark is fine): Over Six Months Aroma: Cutting open the bag, we noted rich, frosted chocolate cake, mocha, chocolate fudge, strawberry compote, and plum. On the grind, the coffee's scents grew brighter, with toasted walnut showing over spiced chocolate, and red berry jam appearing underneath. The pour offers caramel, light brown sugar, molasses, and dark chocolate syrup.

Flavor Profile: Light-bodied and fruit-forward on the sip, the coffee arrives high on the palate, hugging the roof of the mouth before falling on the middle of the tongue. Slightly tea-like in consistency, flavors of blood orange, cacao, hibiscus, soft plum, and raspberry rosé jam swirl, with cranberry and raspberry on the tip of the tongue. Lime, along with a melange of citrus, shows on the sides. The clean finish is of juiced orange and cocoa nibs, with the chocolate persisting. Notably, the flavors embolden as the coffee cools.

Overall Impression (What did you think of it? Anything else we should know?): This was a delicious cup of coffee, perfect for summertime or early fall. We paired it first with a savory dish of pork hash and fried egg, and then with sliced tomato with salt and pepper. In both instances, the coffee excelled. Additionally, its flavors were not diluted when milk was added. We had let this coffee languish on our shelf for far too long, but the flavors were not overly diminished. Luckily, this coffee is back in stock at Heart, and so we recommend venturing to their website and picking up a bag.
