Brewing Method (Drip, Chemex, AeroPress, etc.): Chemex Time Between Purchase and Brewing (Ballpark is fine): Forty-Three Days Aroma: After cutting open the bag, we noted deep, rich chocolate Oreo cookie cake, cake batter, hot cocoa, and nutmeg. Baking spices, oak, dark chocolate and a touch of graham appeared after the grind. On the pour, light and dark brown sugar, molasses, slight wet stone, nougat, and cocoa nibs showed.

Flavor Profile: The coffee arrived with a medium entry that splits high and low on the palate, with a rich, dark chocolate hitting both zones simultaneously. Aromatics of melted high-percentage dark chocolate, hazelnut, mocha, and toasted almond show initially. The tip of the tongue receives rounded soft orange, while the sides of the tongue pick up flavors of orange and lemon, but all of these flavors reside beneath a blanket of lush chocolate. As it cools, red apple, pear, and kumquat appear before a clean finish.

Overall Impression (What did you think of it? Anything else we should know?): This coffee makes for a great everyday sipper. The heavy and full dark chocolate flavor makes the cup perfect for fall or winter, and it reminded us of a cup we had on Lake Como years ago. We recommend pairing this coffee with charcuterie or bread with red fruit jam. Above, we noted that we did not have a price, and that is because this was the gift of a friend of ours who resides in Brazil, and the coffee did not arrive with a price point (nor could we find a price online). Regardless, if you find yourself in the southern hemisphere or Colombia proper, this is a solid coffee to pick up as a souvenir.
