Brewing Method (Drip, Chemex, AeroPress, etc.): Chemex Time Between Purchase and Brewing (Ballpark is fine): One Day Aroma: Opening the bag, we found rich ganache and brownie batter, chocolate cake, cocoa powder, and a touch of nougat. After the grind, baking spices, fresh strawberry, and sliced apple showed over a chocolate and cocoa powder base. On the pour, white cane sugar, dark brown sugar, molasses, chocolate syrup were noted.

Flavor Profile: The coffee arrived with a medium to high entry, slightly viscous and honeyed. Floral on the high end but showing dark chocolate and cocoa powder beneath, the coffee washes across the tongue, and circling back bright fruit shows, including guava, pear, prune, jasmine, and a slight lime. The sides of the tongue, meanwhile, pick up lime and bright orange. The sip ends with a balanced flourish.

Overall Impression (What did you think of it? Anything else we should know?): We found this to be a delicious cup of coffee perfect for fall weather. The cup had weight, but a softness that made it accessible, and the fruit-forward flavors beneath its floral character added nuance. While it appears this coffee has now sold out from Maquina's online store, we recommend keeping an eye out for it, and this roaster, in the future.
