Brewing Method (Drip, Chemex, AeroPress, etc.): Chemex Time Between Purchase and Brewing (Ballpark is fine): Twenty Days Aroma: Tearing open the bag, we noted rich chocolate chip cookie, Oreo cookie and filling, chocolate brownie, and a touch of honeyed graham. After the grind, the nose was brighter, with grain, chocolate ganache, raspberry jam, and an undercurrent of baking spices. The pour offered light brown sugar, raw cane sugar, a touch of caramel, nougat, and black peppercorn.
Flavor Profile: Arriving high on the palate with light to medium body, the flavor flows along the roof to the back of the tongue before dropping, while concomitantly hanging on the tip of the tongue. The roof catches flavors of honey and agave syrup, then the profile shows melon, orange, lemon, lime, and a hint of guava above a cocoa base. The tip and sides of the tongue find the citrus notes. As it cools, the profile grows more robust. The finish is dry and acidic with sharp lemon and the aforementioned peppercorn floating above florals.
Overall Impression (What did you think of it? Anything else we should know?): We initially found this cup to be too acidic, but as it cooled, the coffee found its footing and showed wonderfully. We paired it with cinnamon and allspice pancakes with maple syrup. The citrus notes dominate, but pleasantly so. We recommend stopping into this shop if you are nearby at the headquarters of Caterpillar, as it is a mere stones throw away and a great alternative to a big box chain.
