Brewing Method (Drip, Chemex, AeroPress, etc.): Chemex Time Between Purchase and Brewing (Ballpark is fine): Two days Aroma: Opening the bag, we noted crisped rice and milk chocolate, chocolate ganache, fresh baked brownie, and a hint of honeyed graham. The grind offered strawberry, raspberry jam, and cocoa nibs. The pour smelled of caramel, rich chocolate cake, molasses, and wet dark brown sugar.

Flavor Profile: The sip arrived low to mid palate and washed across the tongue before circling back to the front of the mouth, reaching the roof almost simultaneously with the finish. Notes of chocolate, toasted pecan, hazelnut, almond, and walnut pervade, while the sides receive muted muddled orange peel and a soft touch of lemon. As it cools, scant hints of blackberry and blueberry show. Light bodied and delicate, belying the weightier flavor palate. Clean, slightly sweet finish.

Overall Impression (What did you think of it? Anything else we should know?): We had been looking to try a roast from ReAnimator for a while, as we love their design aesthetic and their awesome merchandise. We founds this to be a steady and subtle roast, which makes sense given its billing as the "Foundation," and it paired well with a variety of items, including milk and apple pie.
