Brewing Method (Drip, Chemex, AeroPress, etc.): Chemex Time Between Purchase and Brewing (Ballpark is fine): Thirteen days Aroma: First notes are of chocolate dust, mocha, a hint of black pepper, kiwi, and lime rind over a muddled mixed fruit jam. A wonderfully fragrant mix of fruit jams, including strawberry and cherry, arises on the grind, with baking spice underneath. Baked peach, caramel, pineapple, and light brown sugar on the pour.


Flavor Profile: Full bodied, lush, and slightly acidic on the intake, with notes of peppercorn, black tea, pineapple, lemon, and lime that soften into baked apple, kiwi, and muddled pear as the sip crosses the tongue. The finish is clean with pink peppercorn aromatics. The tip of the tongue gets a zip of grapefruit, while the sides focus on lime and burnt orange peel. Lovely weight and balance, coating the tongue without the heaviness some coffees can show.

Overall Impression (What did you think of it? Anything else we should know?): We wholeheartedly recommend picking up this coffee, and our rating - one of our highest of 2020 - supports this statement. We paired with apple fritter, and it went exceptionally well, but this is a coffee that can stand on its own and is pure enjoyment in a morning cup.
