Brewing Method (Drip, Chemex, AeroPress, etc.): Chemex Time Between Purchase and Brewing (Ballpark is fine): Nine days Aroma: Bright cocoa powder, honey, raspberry coulis, and fresh chocolate brownie showed when we opened the bag, and the scent grew richer and more developed on the grind, with the brownie and powder, but a deeper melange of red and black berries and Graham cracker. Honeysuckle, chamomile, refined white sugar on the pour.


Flavor Profile: High-to-medium palate entry, lush and full, maintaining a presence in the front half of the tongue with a particular focus on the roof. Almond, pecan, hibiscus, pink peppercorn, honeysuckle, and red apple skin ebb and flow across the tongue, while the tip and sides of the tongue receive gorgeous bright lime, grapefruit, and lemon. As the coffee cools, the florals and fruit grow more pronounced. The finish is clean and bright, hanging on roof of mouth with a hint of acidity paired with the rounded almond note.

Overall Impression (What did you think of it?): This was an absolute delight, made more so by the fact the coffee paired exceptionally well with sweets and savory items. An additional plus is that if you prefer a heavy hand with milk, the coffee takes on a wonderful caramel flavor.
