Review #12: Florin Coffee

Origin of Beans: Kayon Mountain, Ethiopia Price: $15 (10 oz) Brewing Method (Drip, Chemex, AeroPress, etc.): Chemex Time Between Purchase and Brewing (Ballpark is fine): Twenty Days Aroma: Subtle scent of rich chocolate, with a light hint of mint. Upon the grind, we noted rich cocoa and dark brown sugar. On the pour, the coffee showed burnt honey, brown sugar, and simple syrup. Flavor Profile: On entry, this coffee focuses on the tip of the tongue, then runs down the middle with a smooth, leisurely delivery. Light bodied and bright but lush, the coffee hangs in the front half of the mouth and sits on the tongue. Warm light brown sugar dominates with a faint dark chocolate undercurrent, then lemon and lemongrass. Slightly floral aromatics mixed with dark cocoa powder manifest on the back end, with a bit of acidity lingering on the tip of the tongue. Overall Impression (What did you think of it? Anything else we should know?): This was a very pleasant cup, with a brightness and warmth that was especially welcome given the arrival and cool of autumn. The touch of acidity is worth noting to those that are less inclined to that flavor profile, but it’s not off-putting by any means; rather, it lends itself to pairing with a breakfast item. Of note, there was no roast date on the bag, but Florin currently operates primarily online, and they roast twice a week, shipping Mondays and Thursdays. Therefore, the beans will be about a week old by the time they hit your doorstep. Our lag in tasting until day twenty was due to unforeseen travel. Florin’s approach regarding dating on the bag may change once they open a brick and mortar location, which, from our understanding, is happening in the near future.
