Brewing Method (Drip, Chemex, AeroPress, etc.): Chemex Time Between Purchase and Brewing (Ballpark is fine): Four days Aroma: The beans smelled of soft chocolate, fresh baked chocolate chip cookies, raspberry muffins, blueberry, and chocolate rice crisps. Molasses, agave, soft blackberry jam, dark drinking chocolate, and blueberry appeared on the grind. White refined sugar, powdered sugar, crisped rice, and a touch of wild cherry underneath showed on the pour.


Flavor Profile: The coffee arrived with a mid-palate entry, floating high to the roof, ethereal and floral, followed by notes of guava, mango, cantaloupe, orange, and rounded lime. Aromatics are a melange of guava, honey, and the florals. The coffee had a good weight and was slightly viscous. The sides of the tongue get orange and lime while the tip catches lemon and mango. The sip concludes with a clean finish, and fruit lingers on the palate.

Overall Impression (What did you think of it?): This was a surprising cup, as the waves of flavor were unexpected, and the palate varied significantly from the aromas prior to the sip. We recommend picking up a bag of this one, and we look forward to trying additional roasts from Mountain Air.
