Brewing Method (Drip, Chemex, AeroPress, etc.): Chemex Time Between Purchase and Brewing (Ballpark is fine): Twenty Days Aroma: Tearing open the bag, we noted rich chocolate brownie, cocoa powder, Cocoa Puffs cereal, and a slight raspberry compote. After grinding, a deeper scent emerged, with baking spices showing along with a more pronounced raspberry and strawberry jam. The pour offered molasses, dark brown sugar, and dark chocolate.

Flavor Profile: The coffee had a high entry, floating on the roof of the mouth before descending to the tongue. Largely taking up residence on the front half of the tongue, with the tip of the tongue playing a larger role than we see in most coffees, the sip offered delicate but rich flavors, with the initial primary note being high grade dark chocolate. As the coffee cools, notes of toffee hit the center of the tongue, while the tip of the tongue carries a light citrus note of orange and lime along with hints of tangerine and mango. These flavors creep up the palate and flow across the roof of the mouth above the dark chocolate base. Sides of the tongue pick up lemon acidity. Aromatics of dark chocolate and caramel endure after a smooth finish.

Overall Impression (What did you think of it? Anything else we should know?): This coffee had a lighter weight than most coffees we have tried utilizing Brazilian beans, and we enjoyed the wave of citrus notes that flowed over the rich dark chocolate. The coffee worked well with milk, and it paired well with a sweet breakfast item (we tried it with pancakes and syrup). If you're looking for a palatable blend with a reasonable price point, the Halcyon Blend is a recommended option.
