Brewing Method (Drip, Chemex, AeroPress, etc.): Chemex Time Between Purchase and Brewing (Ballpark is fine): Four days Aroma: Opening the bag, we noted a touch of white bread crust, a slight hint of cocoa powder, cocoa krispies, rich milk chocolate, and soft Hawaiian rolls. The coffee showed brighter on the grind, with baking spices, a light toasted white bread crust, red apple skin, and raisin. Caramel, toffee, processed white sugar, molasses appeared on the pour.


Flavor Profile: The sip arrived with a low entry on the palate and a warm brightness that slides across the tongue, starting with a tingle and developing into a melange of citrus, with lime at the forefront, then morphing into grapefruit and creamsicle. Warm milk chocolate follows, along with slight hints of blackberry and florals. Over these notes is a rich, dense cloud of mocha aromatics. The sides of the tongue get lime and red apple skin, while the tip of the tongue gets muddled orange. Clean finish.

Overall Impression (What did you think of it?): We found this to be a delightful coffee that went well on its own or when mixed with milk. For our tasting, we paired this coffee black with a blueberry muffin. We had heard good things about this roaster, and it lived up to the billing.
